Beef Tips:
- 2 lbs beef stew meat or sirloin tips
- Salt and pepper to taste
- 2 tablespoons olive oil
For the Sauce:
- 1 small onion, diced
- 3 garlic cloves, minced
- 2 cups beef broth
- 1/4 cup Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 2 tablespoons cornstarch
- 2 tablespoons water
Garnish:
- Fresh parsley, chopped (optional)
Instructions
- Prepare Beef Tips: Season beef with salt and pepper. Brown beef in batches in a skillet. Transfer to crockpot.
- Make the Sauce: Sauté onion, add garlic, then tomato paste. Pour in beef broth, Worcestershire sauce, soy sauce, thyme, and paprika. Simmer and pour over beef in crockpot.
- Cook: Cover and cook on low for 7–8 hours or on high for 4–5 hours until tender. Thicken sauce with cornstarch mixture.
- Serve: Garnish with parsley before serving.

- Serve over mashed potatoes, rice, or egg noodles.
- For extra richness, stir in a splash of heavy cream or a tablespoon of butter at the end.
