Instructions

  1. Prepare the chicken: Place the bite-sized chicken thigh pieces into the crock pot, ensuring they are evenly distributed for even cooking.
  2. Make the sauce: In a medium bowl, whisk together low-sodium soy sauce, hoisin sauce, rice vinegar, ketchup, brown sugar, minced garlic, grated ginger, and optional red pepper flakes until well combined.
  3. Combine and cook: Pour the sauce over the chicken pieces in the crock pot and stir to coat all the chicken evenly. Cover with the lid and cook on low heat for 4 hours or on high heat for 2 hours, until the chicken is tender and fully cooked.
