Instructions

  1. Prepare Peach Filling: In a small saucepan over medium heat, combine the peaches, brown sugar, cinnamon, vanilla extract, and cornstarch. Cook for 3–5 minutes, stirring frequently, until the mixture thickens slightly and becomes syrupy. Remove from heat and let cool.
  2. Make Cream Cheese Filling (Optional): In a small bowl, mix the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
  3. Assemble Egg Rolls: Place an egg roll wrapper on a clean surface with a corner facing you. Spoon 1–2 tablespoons of the cooled peach mixture (and a little cream cheese filling if using) onto the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly, sealing the top edge with a dab of water. Repeat with all wrappers.
  4. Heat Oil: In a deep pan, heat 2–3 inches of vegetable or canola oil to 350°F (175°C).
