Instructions
- Preheat the Oven: Preheat your oven to 450°F (232°C) to get it ready for baking the tacos crispy.
- Cook the Ground Beef: Heat a skillet over medium-high heat. Add the lean ground beef and cook, breaking it up with a spoon until browned and fully cooked. Stir in the taco seasoning and enchilada sauce, bring to a simmer for a few minutes to meld flavors, then remove from the heat.
- Prepare the Tortillas: Wrap the corn tortillas in a damp paper towel and microwave for 30 to 60 seconds until they are pliable and easy to fold. Brush one side of each tortilla lightly with olive oil.
- Assemble the Tacos: Place tortillas on a baking sheet with the oiled side down. To half of each tortilla, add 2 tablespoons of shredded cheese, spoon 1/4 cup of the cooked beef over the cheese, and then add 2 more tablespoons of cheese on top. Fold the tortilla over to cover the filling, creating a taco shape.
- Repeat for Remaining Tacos: Assemble the rest of the tortillas using the same layering method and arrange all the tacos in a single layer on the baking sheet.
- Bake the Tacos: Place the baking sheet in the preheated oven and bake for approximately 16 minutes or until the tortillas are crispy and the cheese has melted perfectly.
