Ingredients
Scale
Filling
- 2 cups cooked shredded chicken
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/4 cup sour cream
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp cumin
- 1/4 tsp chili powder
- Salt and pepper to taste
Taquitos
- 10 small flour tortillas
- Vegetable oil for frying, about 1 inch
Optional Toppings
- Salsa
- Guacamole
- Sour cream
- Chopped cilantro
Instructions
- Prepare the filling: In a large mixing bowl, combine the cooked shredded chicken, shredded cheddar cheese, softened cream cheese, and sour cream. Mix thoroughly until well combined and creamy.
- Season the mixture: Add garlic powder, onion powder, cumin, chili powder, salt, and pepper to the mixture. Stir well to ensure the spices are evenly distributed throughout the filling.
- Fill the tortillas: Lay each small flour tortilla flat on a clean work surface. Spoon about 2-3 tablespoons of the prepared chicken mixture onto the lower third of the tortilla.
- Roll the taquitos: Roll the tortilla tightly around the filling to enclose it completely. Repeat this process with all remaining tortillas and filling.
- Heat the oil: Pour vegetable oil into a large skillet to about 1 inch deep and heat over medium-high heat until hot but not smoking, ideally around 350°F (175°C).
- Fry the taquitos: Carefully place a few rolled taquitos seam-side down into the hot oil. Fry them for about 2-3 minutes per side, turning carefully, until they turn golden brown and crispy.
- Drain excess oil: Remove the fried taquitos from the skillet and place them on paper towels to drain excess oil. Repeat frying with the remaining taquitos.
- Serve: Serve the taquitos warm with optional toppings such as salsa, guacamole, sour cream, or chopped cilantro to enhance flavor and presentation.
Notes
- Ensure the oil is hot enough before frying to prevent soggy taquitos; test by dropping a small bit of batter or tortilla—if it sizzles immediately, the oil is ready.
- For extra crispiness, use corn tortillas instead of flour, but warm them first to prevent cracking.
- You can bake these taquitos at 425°F (220°C) for about 20 minutes, flipping halfway, as a healthier alternative to frying.
- Leftover taquitos can be reheated in an air fryer or oven to retain crispy texture.
- Adjust spices to taste; adding cayenne pepper can add a spicy kick.
