Eggplant Fries:
- 1 medium eggplant, peeled and cut into fry-sized sticks
- 1 teaspoon salt
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder

- 1 cup marinara sauce (for serving)
Instructions
- Preheat the Oven: Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Prepare Eggplant: Place the eggplant fries in a colander, sprinkle with salt, and let sit for 20 minutes. Rinse and pat dry.
- Dredge: Set up a dredging station with flour, beaten eggs, and breadcrumb mixture. Coat each eggplant stick and place on the baking sheet.
- Bake: Lightly spray with cooking oil and bake for 20–25 minutes until crispy and golden brown.
- Serve: Serve warm with marinara sauce for dipping.
