Soup:

  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 5 cups low-sodium chicken broth
  • 8 lasagna noodles, broken into bite-sized pieces

Cheesy Mixture:

  • 1 cup whole milk
  • 4 ounces cream cheese, softened and cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Additional:

  • 2 cups fresh spinach
  • Chopped parsley for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned, about 5 to 7 minutes. Set aside.
  2. Sauté onion for 3 to 4 minutes until soft. Add garlic and cook for 1 more minute.
  3. Stir in Italian seasoning, basil, salt, pepper, and red pepper flakes if using. Pour in chicken broth and bring to a boil.
  4. Add lasagna noodles and simmer for 10 to 12 minutes until tender.
  5. Return cooked chicken to the pot. Stir in milk and cream cheese until melted and smooth.
  6. Add mozzarella and Parmesan cheese, stirring until combined.
  7. Fold in fresh spinach and let wilt. Garnish with parsley before serving.

  • For a thicker soup, reduce broth by 1 cup or add more cheese.
