Pasta:
- 12 ounces fettuccine or linguine
Sauce:
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 small shallot, finely chopped
- 1/4 teaspoon crushed red pepper flakes (more to taste)
- 1/2 cup dry white wine
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon tomato paste
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- 12 ounces cooked lobster meat, chopped
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh parsley (optional garnish)
Instructions
- Cook the Pasta: Boil salted water, cook pasta until al dente, reserve pasta water, drain.
- Make the Sauce: Sauté garlic, shallot, and red pepper flakes. Add tomato paste, paprika, wine, cream, Parmesan, salt, and pepper. Simmer, then add lobster, lemon juice, and pasta.
- Finish and Serve: Toss everything, adding pasta water as needed. Garnish with parsley and serve.
Notes
- You can use frozen lobster tails—just thaw, steam, and chop.
- For extra spice, increase the red pepper flakes or add a pinch of cayenne.
