Ingredients

Scale

For the Chicken:

  • 1 pound boneless, skinless chicken breasts (sliced)
  • 2 tablespoons olive oil
  • 1 tablespoon taco seasoning

For the Pasta:

  • 12 oz fettuccine or penne pasta
  • 3 cloves garlic (minced)
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded pepper jack cheese
  • 1 (10 oz) can diced tomatoes with green chilies (drained)
  • 1/2 cup corn (fresh, canned, or frozen)
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Prepare the pasta according to package directions. Reserve 1/2 cup of pasta water, drain, and set aside.
  2. Cook the Chicken: In a skillet over medium heat, cook sliced chicken with taco seasoning until golden and cooked through. Set aside.
  3. Prepare the Sauce: In the same skillet, sauté garlic, then add cream and chicken broth. Simmer, then add Parmesan and pepper jack cheeses until melted.
  4. Combine: Add tomatoes, corn, cooked chicken, and pasta to the skillet. Toss to combine, adding reserved pasta water as needed.
  5. Season and Serve: Season with salt and pepper, garnish with cilantro, and serve hot.

Notes

  • For a spicier kick, use hot diced tomatoes with green chilies or add cayenne pepper.
