- 1 cup boiling water
- 1/2 cup cold water
- 1 cup crushed pineapple with juice
- 1 cup whipped topping (like Cool Whip)
- 1/2 cup sour cream
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Dissolve Gelatin: In a mixing bowl, dissolve lemon gelatin in 1 cup of boiling water. Stir continuously for 1–2 minutes until the gelatin is completely dissolved and the mixture is clear.
- Add Liquids and Pineapple: Pour in 1/2 cup of cold water along with the crushed pineapple including its juice. Stir gently but thoroughly to combine all ingredients evenly.
- Chill Until Thickened: Place the gelatin mixture in the refrigerator for about 30–45 minutes, or until it starts to thicken and becomes slightly syrupy, but is not fully set.
- Fold in Creamy Ingredients: Remove from fridge and fold in the whipped topping and sour cream carefully until the mixture is smooth and creamy. If using nuts, gently fold them in at this stage to distribute evenly.
- Set the Dessert: Pour the creamy mixture into a serving dish or mold of your choice. Refrigerate for at least 2 to 4 hours or until the jello is fully set and firm to the touch.
- Serve: Serve the pineapple lemon jello chilled, plain or topped with extra whipped topping if desired for added indulgence.
