Ingredients

Scale

Pasta:

  • 8 ounces fettuccine or linguine pasta

Shrimp:

  • 1 pound large shrimp (peeled and deveined)

Sauce:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Additional:

  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Cook the pasta: Cook the pasta according to package directions until al dente. Drain and set aside.
  2. Cook the shrimp: In a large skillet, heat olive oil and butter. Cook the shrimp for 2–3 minutes per side until pink and opaque. Remove and set aside.
  3. Make the sauce: In the same skillet, sauté garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Add chicken broth and simmer. Stir in cream and Parmesan until creamy. Season with salt and pepper.
  4. Combine and serve: Return shrimp to the skillet, add pasta, and toss in the sauce. Heat through. Garnish with basil or parsley.

Notes

  • For added depth, deglaze the pan with white wine before adding broth.
  • You can use half-and-half for a lighter sauce.
