Description

This creamy feta bruschetta dip combines fresh marinated tomatoes with a smooth, tangy cheese blend for a delightful appetizer. Perfect for parties or casual snacking, the dip balances the brightness of basil and garlic with the rich creaminess of feta, cream cheese, and sour cream.

Ingredients

Scale

Bruschetta Mixture

  • 4 Roma tomatoes, cored and diced
  • ¼ cup basil leaves, chopped
  • 1 garlic clove, minced
  • 1 tablespoon extra virgin olive oil
  • 1–2 teaspoons balsamic vinegar
  • Salt, to taste

Cheese Mixture

  • 8 oz feta cheese block, crumbled
  • ½ block cream cheese (4 oz)
  • ½ cup sour cream
  • 1 garlic clove, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon olive oil
  • Salt, to taste

Garnishes

  • More basil leaves, chopped
  • Red pepper flakes
  • Parmesan cheese, freshly grated

Instructions

  1. Preparing the Bruschetta: Begin by coring and dicing the Roma tomatoes into small cubes. Place the diced tomatoes in a bowl and add the chopped basil, minced garlic, extra virgin olive oil, balsamic vinegar, and salt. Toss gently to combine and set aside to marinate, allowing the flavors to meld.
  2. Preparing the Cheese Mixture: In a food processor, combine the crumbled feta cheese, cream cheese, sour cream, minced garlic, freshly squeezed lemon juice, and olive oil. Puree the mixture until smooth and creamy. Taste and adjust the seasoning by adding salt as needed.
  3. Assembling the Dip: Transfer the smooth cheese mixture to a serving dish. Spoon the marinated bruschetta mixture over the top. Garnish with additional chopped basil leaves, a sprinkle of red pepper flakes for a slight kick, and freshly grated Parmesan cheese for added flavor and texture. Serve immediately with crusty bread or crackers.

Notes

  • Use fresh, ripe Roma tomatoes for the best flavor in the bruschetta.
  • Marinating the tomato mixture allows the flavors to develop for a more vibrant taste.
  • Adjust the amount of balsamic vinegar depending on your preference for tanginess.
  • The dip is best served fresh but can be refrigerated for up to 24 hours. Stir gently before serving if chilled.
  • Pair with toasted baguette slices, pita chips, or vegetable sticks for a crowd-pleasing appetizer.
