Vegetables & Herbs
- 2 medium courgettes (zucchini), grated or finely chopped
- 2 cloves garlic, minced
- Zest of 1 lemon (optional)
- Fresh basil or parsley for garnish
Dairy & Cheese
- 1/2 cup heavy cream or crème fraîche
- 1/4 cup grated Parmesan cheese
Pantry Staples
- 2 tablespoons olive oil
- 1/2 teaspoon chili flakes (optional)
- 8 ounces pasta (spaghetti, linguine, or penne)
- Salt and pepper to taste
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil and add the pasta. Cook according to package directions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.
- Sauté Garlic and Chili: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and chili flakes, sauté for about 1 minute until fragrant but not browned.
- Cook Courgettes: Add the grated courgettes to the skillet. Cook for 5 to 7 minutes, stirring frequently, until softened and lightly golden.
- Make the Cream Sauce: Stir in the heavy cream and grated Parmesan cheese. Let the sauce simmer gently for 2 to 3 minutes, adding a splash of the reserved pasta water as needed to reach desired consistency. Season with salt, pepper, and lemon zest if using.
- Toss Pasta with Sauce: Add the cooked pasta to the skillet and toss thoroughly to coat it evenly with the creamy courgette sauce.
- Serve and Garnish: Serve the pasta warm with a garnish of fresh basil or parsley and extra Parmesan cheese if desired.
Notes
- For a lighter alternative, substitute heavy cream with Greek yogurt or use a splash of milk.
- Add vegetables like peas or spinach for extra color and nutrition.
- For added protein, incorporate grilled chicken or your favorite cooked meat.
