Description

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized strips

Vegetables and Sauce

  • 1 tablespoon unsalted butter
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 8 ounces cremini or white mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • ¾ cup sour cream
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken strips and cook for 5–6 minutes, stirring occasionally, until the chicken is golden and just cooked through. Remove the chicken from the skillet and set it aside.
  2. Sauté Vegetables: In the same skillet, reduce the heat to medium and add unsalted butter. Sauté the finely chopped onion for 2–3 minutes until softened. Then add the minced garlic and sliced mushrooms, cooking for 5–6 minutes until the mushrooms are browned and tender.
  3. Season and Thicken Sauce: Stir in the paprika, salt, and black pepper with the sautéed vegetables. Sprinkle the flour over them and stir well to coat everything evenly. Gradually pour in the chicken broth while stirring constantly to prevent lumps, allowing the sauce to thicken slightly.
  4. Add Dairy and Combine: Reduce the heat to low and stir in the sour cream and Dijon mustard until the sauce is smooth and creamy. Return the cooked chicken to the skillet and simmer together for 3–4 minutes to heat through completely.
  5. Garnish and Serve: Optionally sprinkle chopped fresh parsley on top for a fresh flavor and color contrast. Serve the creamy chicken stroganoff hot over a bed of cooked egg noodles or rice for a complete meal.

  • For extra richness, substitute part of the sour cream with heavy cream.
