Description

These Cranberry Oatmeal Muffins are a delightful blend of wholesome oats, tart cranberries, and warm spices, making them a perfect treat for breakfast or snack time.

Dry Ingredients:

  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar (packed)
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Wet Ingredients:

  • 1 cup buttermilk
  • 1 large egg
  • 1/4 cup vegetable oil or melted butter
  • 1 tsp vanilla extract

Additional:

  • 1 cup fresh or frozen cranberries (halved)
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and prepare a muffin tin with liners or grease.
  2. Soften oats: Combine oats and buttermilk in a bowl, let sit for 10 minutes.
  3. Mix dry ingredients: In a separate bowl, whisk flour, brown sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Combine ingredients: Add egg, oil, and vanilla to oat mixture, then mix in dry ingredients. Fold in cranberries and nuts.
  5. Bake: Divide batter into muffin cups and bake for 18–22 minutes until a toothpick comes out clean. Cool before serving.

Notes

  • If using frozen cranberries, do not thaw before adding to the batter.
  • Dried cranberries can be used, reduce to 2/3 cup and soak in warm water for 10 minutes.
