Ingredients
Scale
Beef Roast
- 3 lb beef roast (sirloin, chuck, or your preferred cut)
Sauce
- 1 cup fresh cranberries (or 1/2 cup cranberry sauce)
- 1/2 cup balsamic vinegar
- 1/4 cup honey
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup beef broth
Other
- 2 tablespoons olive oil
- Salt and pepper for seasoning beef roast
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for roasting the beef perfectly.
- Prepare the cranberry balsamic sauce: In a saucepan over medium heat, combine the fresh cranberries, balsamic vinegar, honey, minced garlic, chopped rosemary, salt, and black pepper. Simmer gently for 5-7 minutes until the cranberries burst and the sauce thickens slightly. Then add the beef broth and cook for an additional 2-3 minutes. Remove from heat.
- Sear the beef roast: Heat olive oil in an oven-safe skillet over medium-high heat. Season the beef roast generously with salt and pepper. Sear the roast on all sides for about 4-5 minutes per side to develop a crust and lock in the juices.
- Combine and roast: Pour the cranberry-balsamic sauce over the seared roast in the skillet. Transfer the skillet to the preheated oven.
- Roast the beef: Roast for 1.5 to 2 hours, basting the roast with the sauce every 30 minutes. The roast is done when the internal temperature reaches 135°F for medium-rare or 145°F for medium.
- Rest and serve: Remove the roast from the oven and let it rest for 10 minutes before slicing. Serve the roast beef with the cranberry-balsamic sauce for a delicious, tender meal.
