Description

A succulent and flavorful Cranberry Balsamic Roast Beef recipe that combines tender, oven-roasted beef with a tangy, slightly sweet cranberry balsamic sauce. Perfect for a hearty dinner that offers a gourmet touch with simple ingredients and easy steps.

Ingredients

Scale

Beef Roast

  • 3 lb beef roast (sirloin, chuck, or your preferred cut)

Sauce

  • 1 cup fresh cranberries (or 1/2 cup cranberry sauce)
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup beef broth

Other

  • 2 tablespoons olive oil
  • Salt and pepper for seasoning beef roast

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for roasting the beef perfectly.
  2. Prepare the cranberry balsamic sauce: In a saucepan over medium heat, combine the fresh cranberries, balsamic vinegar, honey, minced garlic, chopped rosemary, salt, and black pepper. Simmer gently for 5-7 minutes until the cranberries burst and the sauce thickens slightly. Then add the beef broth and cook for an additional 2-3 minutes. Remove from heat.
  3. Sear the beef roast: Heat olive oil in an oven-safe skillet over medium-high heat. Season the beef roast generously with salt and pepper. Sear the roast on all sides for about 4-5 minutes per side to develop a crust and lock in the juices.
  4. Combine and roast: Pour the cranberry-balsamic sauce over the seared roast in the skillet. Transfer the skillet to the preheated oven.
  5. Roast the beef: Roast for 1.5 to 2 hours, basting the roast with the sauce every 30 minutes. The roast is done when the internal temperature reaches 135°F for medium-rare or 145°F for medium.
  6. Rest and serve: Remove the roast from the oven and let it rest for 10 minutes before slicing. Serve the roast beef with the cranberry-balsamic sauce for a delicious, tender meal.

Notes

  • Use a meat thermometer to ensure the roast reaches your desired level of doneness.
  • Fresh cranberries can be substituted with cranberry sauce if fresh are unavailable.
  • This recipe works well with sirloin or chuck roast; choose your favorite cut based on preference and budget.
  • For a gluten-free version, ensure the beef broth is gluten-free.
  • Leftover roast beef can be stored in an airtight container in the refrigerator for up to 3 days.
