  • 1/2 pound cooked shrimp (peeled, deveined, and chopped)
  • 1/2 pound lump crab meat (picked over for shells)
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Sauté Aromatics: In a large saucepan, melt butter with olive oil over medium heat. Add chopped onion and garlic, cooking until softened, about 5 minutes.
  2. Make Roux: Stir in the flour and cook for 1 minute to form a roux.
  3. Deglaze and Simmer: Slowly whisk in the white wine and cook for another minute. Gradually add the broth while stirring constantly to avoid lumps. Stir in the tomato paste, Worcestershire sauce, paprika, cayenne, salt, and black pepper. Simmer for 10 minutes.
  4. Finish Bisque: Stir in the heavy cream and milk, then add the shrimp and crab meat. Cook for another 5–7 minutes until heated through. Stir in lemon juice and parsley just before serving.

Notes

  • For an extra-smooth bisque, blend the soup before adding seafood.
  • Use seafood stock for richer flavor.
  • You can substitute half-and-half for the cream and milk to lighten it.
