Description

Cowboy Casserole is a comforting, hearty one-dish meal featuring a savory blend of ground beef, creamy soups, corn, and crispy tater tots topped with melted cheddar cheese. Perfect for a family dinner, this casserole comes together quickly and bakes to golden perfection, delivering a satisfying combination of flavors and textures.

Ingredients

Scale

Meat and Vegetables

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 can (15 oz) corn, drained

Soups and Seasonings

  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Toppings

  • 1 bag (32 oz) frozen tater tots
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the casserole evenly.
  2. Cook Beef and Onions: In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is fully browned and the onions become soft. Drain off any excess fat to keep the casserole from being greasy.
  3. Combine Ingredients: Stir in the cream of mushroom soup, cream of chicken soup, drained corn, garlic powder, onion powder, salt, and pepper into the beef mixture. Mix thoroughly to blend all the flavors well.
  4. Assemble Casserole: Spread this beef and soup mixture evenly across the bottom of a 9×13-inch baking dish to create a solid base for the casserole.
  5. Add Tater Tots: Arrange the frozen tater tots in a single, even layer over the top of the beef mixture, which will form a crispy topping as it bakes.
  6. Bake Tater Tots: Place the dish in the preheated oven and bake for 25 minutes, or until the tater tots are golden brown and crispy on top.
  7. Add Cheese and Finish Baking: Remove the casserole from the oven and sprinkle the shredded cheddar cheese evenly over the tater tots. Return to the oven and bake for an additional 5 to 10 minutes until the cheese melts and becomes bubbly.

Notes

  • For added flavor, consider sprinkling some smoked paprika or chili powder into the beef mixture.
  • You can substitute cheddar cheese with Monterey Jack or pepper jack for a different twist.
  • Feel free to add diced bell peppers or jalapeños with the onions for extra veggies and spice.
  • Let the casserole rest for a few minutes after baking to make serving easier.
  • Use lean ground beef to reduce fat content.
