Instructions
- Hard-Boil Eggs: Hard-boil the eggs using an Instant Pot or stovetop method for about 12 minutes. Once cooked, immediately transfer them to ice water to cool, then peel the eggs carefully.
- Prepare Jalapeños: Wearing gloves, slice the jalapeños into 1/4-inch thick rounds. Adjust the amount of seeds included based on your desired spice level.
- Make Brine: In a saucepan, combine the cider vinegar, brown sugar, cayenne pepper, salt, and sliced jalapeños. Heat the mixture until the sugar and salt dissolve completely and the brine is aromatic, then remove from heat.
- Layer in Jar: Place the peeled eggs and jalapeño slices alternately in a clean quart-sized jar to distribute flavors evenly.
- Add Brine: Pour the warm brine over the eggs and jalapeños, making sure the eggs are fully submerged to preserve and flavor them properly.
