- 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
- Salt and black pepper to taste
- 1 teaspoon Italian seasoning, divided
- 2 tablespoons olive oil
For the Pasta:
- 12 oz linguine pasta
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon crushed red pepper flakes
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese
Instructions
- Cook the Linguine: Boil salted water, cook linguine until al dente, drain, and set aside.
- Cook the Chicken: Season chicken with salt, pepper, and half of the Italian seasoning. Cook until golden, then set aside.
- Prepare the Sauce: Melt butter, add garlic, Dijon mustard, lemon juice, lemon zest, paprika, red pepper flakes, and remaining Italian seasoning. Simmer.
- Combine Everything: Return chicken to skillet with linguine and pasta water. Toss in the sauce.
- Finish and Serve: Stir in parsley and Parmesan. Garnish with extra parsley.
