Ingredients
Scale
Cornbread Waffle Bites
- 1 cup cornbread mix
- 1/2 cup buttermilk
- 1 large egg
- 1/4 cup shredded cheddar cheese (optional)
- 1/4 cup cooked and crumbled bacon (optional)
Honey Butter Syrup
- 1/4 cup honey
- 2 tbsp unsalted butter
- 1 tbsp maple syrup (optional)
- Pinch of salt
Instructions
- Prepare the Waffle Batter: In a mixing bowl, whisk together the cornbread mix, buttermilk, and egg until you achieve a smooth batter. If desired, gently fold in shredded cheddar cheese and cooked, crumbled bacon for added flavor and texture.
- Cook the Waffle Bites: Preheat your mini waffle maker and lightly grease it to prevent sticking. Spoon about 1 tablespoon of batter into each section and cook for 3 to 4 minutes, or until the waffle bites are golden brown and cooked through. Remove and repeat with the remaining batter.
- Make the Honey Butter Syrup: In a small saucepan set over low heat, combine honey, unsalted butter, optional maple syrup, and a pinch of salt. Stir continuously until the butter is melted and the mixture is smooth. Remove from heat once combined.
- Serve: Arrange the cooked cornbread waffle bites on a serving platter. Drizzle generously with the warm honey butter syrup and serve immediately for the best flavor and texture experience.
Notes
- For a vegetarian version, omit the bacon and use just cheese or skip both.
- You can make these waffle bites ahead of time and reheat them in a toaster or oven to maintain crispiness.
- Adjust the sweetness by varying the amount of honey and maple syrup in the syrup.
- If you don’t have buttermilk, substitute with milk mixed with a teaspoon of lemon juice or vinegar.
- Mini waffle makers work best for bite-sized waffles, but a regular waffle iron can be used for larger sizes.
