- 1 can (400ml) Coconut Cream (Chilled overnight)
- 2 tbsp Powdered Sugar (Adjust to taste, maple syrup can be used)
- 1 tsp Pure Vanilla Extract
- 1 tsp Gelatin Powder
- 2 tbsp Warm Water
- A pinch of Salt
For Topping
- 1 cup Fresh Mango or Berries

- Bloom the Gelatin: In a small bowl, sprinkle the gelatin powder over 2 tablespoons of warm water. Let it sit for 5 minutes until the gelatin blooms and absorbs the water.
- Whip the Coconut Cream: Scoop the solidified coconut cream from the can into a mixing bowl. Add powdered sugar, pure vanilla extract, and a pinch of salt. Using an electric mixer, beat the mixture for 3-5 minutes until it becomes light, airy, and fluffy.
- Melt the Gelatin: Gently warm the bloomed gelatin in the microwave for 10-15 seconds until fully melted but not boiling.
- Combine Gelatin and Coconut Cream: Slowly drizzle the melted gelatin into the whipped coconut cream while continuously mixing to ensure even incorporation.
- Set the Mousse: Spoon the creamy coconut mixture into serving dishes. Refrigerate for at least 2 hours, allowing the mousse to firm up and set properly.
- Add Toppings and Serve: Just before serving, top each portion with fresh mango slices or mixed berries to add a fresh, fruity contrast.
