Ingredients
Scale
Base
- 40 saltine crackers (about 1 sleeve)
Toffee Layer
- 1 cup unsalted butter
- 1 cup brown sugar (packed)
- 1 teaspoon vanilla extract
- Pinch of salt
Topping
- ½ cup granulated sugar
- 1 teaspoon ground cinnamon
- 1 cup white chocolate chips or almond bark (optional)
Instructions
- Prepare Baking Sheet: Preheat the oven to 350°F (175°C). Line a rimmed baking sheet approximately 9×13 inches with parchment paper or foil for easy cleanup. Arrange the saltine crackers in a single layer to cover the bottom completely without overlapping.
- Make Toffee Mixture: In a medium saucepan over medium heat, melt the unsalted butter with the packed brown sugar, stirring constantly to combine. Once the mixture begins to boil, allow it to boil gently for 3 minutes without stirring to develop the toffee texture.
- Add Flavor and Pour: Remove the saucepan from heat, then stir in the vanilla extract and a pinch of salt. Immediately pour the hot toffee mixture evenly over the saltine crackers on the baking sheet, using a spatula to spread it to the edges, ensuring full coverage.
- Bake the Toffee: Place the baking sheet in the preheated oven and bake for 8 to 10 minutes, until the toffee layer is bubbling and set. While baking, combine the granulated sugar and ground cinnamon in a small bowl to prepare the cinnamon sugar topping.
- Add Toppings: Remove the baking sheet from the oven. Immediately sprinkle the cinnamon sugar mixture evenly over the hot toffee. If using white chocolate chips or almond bark, sprinkle them over the hot surface, wait 1 to 2 minutes for them to melt, and then spread evenly with a spatula.
- Cool and Set: Allow the toffee to cool completely at room temperature until firm. For best results, chill it in the refrigerator until fully set and hardened.
- Serve: Once set, break the toffee into individual pieces and serve. Store any leftovers in an airtight container at room temperature.
Notes
- Store the toffee in an airtight container at room temperature for up to 1 week to maintain freshness.
- For extra crunch and flavor, optionally top with chopped pecans or drizzle with caramel before serving.
