Ingredients
Cookies:
1 cup unsalted butter (softened), 1 cup granulated sugar, 1 large egg, 1 1/2 teaspoons vanilla extract, 1/2 teaspoon almond extract (optional), 2 1/4 cups all-purpose flour, 1/2 teaspoon baking powder, 1/4 teaspoon salt
Frosting:
1/2 cup unsalted butter (softened), 2 cups powdered sugar, 2–3 tablespoons milk or cream, 1 teaspoon vanilla extract, food coloring (optional), holiday sprinkles for decorating
Instructions
- Preheat the oven: Preheat the oven to 350°F. Line a 9×13-inch baking pan with parchment paper and lightly grease.
- Prepare the cookie base: Cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg, vanilla extract, and almond extract if using. Whisk together the flour, baking powder, and salt in a separate bowl. Gradually add the dry ingredients to the wet, mixing until a soft dough forms.
- Bake: Press the dough into the prepared pan. Bake for 18–22 minutes until lightly golden. Cool completely.
- Make the frosting: Beat softened butter until smooth. Gradually mix in powdered sugar, adding milk until creamy. Stir in vanilla and food coloring if desired.
- Frost and decorate: Spread frosting over the cooled cookie base. Add holiday sprinkles. Chill before slicing into bars.
