Description

These Christmas Shortbread Sugar Cookie Bites are buttery, tender, and festive with colorful holiday sprinkles. Perfectly bite-sized, they are easy to make and bake quickly, making them an ideal treat for holiday gatherings or as a cheerful gift.

Ingredients

Scale

Cookie Dough

  • 1 cup (230g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1 tsp vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/4 tsp salt
  • 1/4 cup holiday sprinkles (red, green, and white)

Instructions

  1. Preheat the Oven & Prepare the Baking Sheet: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to ensure the cookies bake evenly and do not stick.
  2. Make the Dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Stir in the vanilla extract to add flavor.
  3. Add Dry Ingredients: Gradually add the all-purpose flour and salt to the butter-sugar mixture. Stir until a soft dough forms. If the dough feels dry, knead it gently with your hands until it becomes smooth and cohesive.
  4. Add Sprinkles: Gently fold in the holiday sprinkles until evenly distributed throughout the dough to add festive colors and slight texture.
  5. Shape the Cookies: Roll the dough into small balls approximately 1/2 inch (1.25 cm) in diameter. Alternatively, you can shape the dough into a log and slice it into uniform cubes for consistent baking.
  6. Bake the Cookies: Place the dough balls or slices on the prepared baking sheet, spacing them so they do not touch. Bake for 8-10 minutes or until the edges turn lightly golden, indicating they are perfectly baked.
  7. Cool and Optional Decoration: Let the cookies cool on the baking sheet for 5 minutes to set. Then transfer to a wire rack to cool completely. For extra holiday flair, drizzle with melted white chocolate and sprinkle additional holiday sprinkles on top.

Notes

  • Ensure butter is softened to room temperature for easier creaming and better texture.
  • Do not over-bake the cookies to keep them tender and crumbly.
  • Sprinkles add festive color but can be omitted or substituted with chopped nuts.
  • Store cookies in an airtight container at room temperature for up to one week.
  • Optional white chocolate drizzle adds sweetness and decorative appeal.
