Cake:

- 1 cup chopped pecans
Instructions
- Preheat oven: Preheat oven to 350°F. Grease and flour three 9-inch round cake pans.
- Melt chocolate: Melt chocolate in boiling water, stir until smooth, and let cool slightly.
- Prepare dry ingredients: Whisk together cake flour, baking soda, and salt in a medium bowl.
- Cream butter and sugar: In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolks one at a time, then add melted chocolate and vanilla.
- Combine wet and dry ingredients: Add dry ingredients alternately with buttermilk to the butter mixture.
- Whip egg whites: In a separate bowl, beat egg whites until stiff peaks form, then fold gently into the batter.
- Bake: Divide batter among pans and bake for 25–30 minutes. Cool cakes before assembling.
- Make frosting: Cook evaporated milk, sugar, egg yolks, and butter until thickened. Stir in vanilla, coconut, and pecans. Cool before spreading on cake.
- Assemble: Spread frosting between layers and on top of the cake.
