- Prepare the mint filling: In a mixing bowl, combine powdered sugar, softened butter, heavy cream, peppermint extract, vanilla extract, and a pinch of salt. Mix until a smooth, thick dough forms. If the dough feels sticky, gradually add more powdered sugar until it is firm and easy to handle.
- Shape the patties: Roll the dough into 1-inch balls, then flatten each ball into a small disc shape about 1/4 inch thick. Arrange the discs on a parchment-lined baking sheet.
- Freeze to firm up: Place the baking sheet with the formed patties into the freezer for 20 to 30 minutes until they are firm and chilled, making them easier to dip in chocolate.
- Melt the chocolate: While the patties chill, melt the chopped semisweet or dark chocolate with coconut oil (if using) in a microwave-safe bowl. Heat in 30-second intervals, stirring in between until the chocolate is fully melted and smooth.
- Coat the patties in chocolate: Using a fork, carefully dip each chilled mint patty into the melted chocolate, ensuring it is fully coated. Allow any excess chocolate to drip off before placing the coated patty back onto the parchment-lined baking sheet.
