Ingredients
Scale
Chicken Mixture
- 2 cups cooked shredded chicken
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lime juice
Tostadas and Beans
- 8 tostada shells
- 1 cup refried beans
Toppings
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/4 cup diced red onion
- 1 avocado, diced
- 1/2 cup shredded cheddar or Mexican blend cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- 2 tablespoons chopped fresh cilantro
Instructions
- Season the Chicken: In a bowl, combine the shredded chicken with chili powder, ground cumin, salt, black pepper, and lime juice. Toss thoroughly until the chicken is evenly coated with the spices and lime juice, allowing the flavors to meld.
- Warm the Refried Beans: Place the refried beans in a small saucepan and heat over medium heat, stirring occasionally, until warmed through and smooth in texture.
- Crisp the Tostada Shells: Arrange the tostada shells on a baking sheet and warm them in a preheated oven at 350°F (175°C) for about 5 minutes, or until they become crisp and lightly golden.
- Assemble the Tostadas: Spread a layer of warm refried beans evenly on each tostada shell. Then top with a generous portion of the seasoned shredded chicken. Follow by layering shredded lettuce, diced tomatoes, diced red onions, and diced avocado on top.
- Add Cheese, Sour Cream, and Salsa: Sprinkle shredded cheddar or Mexican blend cheese over the toppings. Drizzle sour cream and salsa evenly on each tostada to add creaminess and tang.
- Garnish and Serve: Finish by scattering chopped fresh cilantro on top for a burst of freshness. Serve immediately to enjoy the tostada shells while they’re still crisp.
Notes
- Rotisserie chicken works well for this recipe and saves time.
- Toppings can be customized with jalapenos, guacamole, or queso fresco for added flavor.
- For extra crunch, add shredded cabbage along with the lettuce.
