- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1 cup uncooked white rice (long grain or jasmine)
- 8 cups chicken broth
- 2 cups cooked shredded chicken
- 1 teaspoon dried thyme
- 1/2 teaspoon dried parsley
- Salt and black pepper to taste
- Juice of half a lemon (optional for brightness)
- Chopped fresh parsley, for garnish (optional)
Instructions
- Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the onion, garlic, carrots, and celery. Sauté for about 5 minutes until softened.
- Add Herbs and Broth: Stir in thyme and parsley. Pour in the chicken broth and bring to a boil.
- Cook Rice: Stir in rice and simmer for 15-20 minutes until tender.
- Finish Soup: Add shredded chicken and simmer for another 5-10 minutes. Season with salt, pepper, and lemon juice.
- Serve: Garnish with fresh parsley and serve hot.
Notes
- You can use rotisserie chicken for convenience or simmer raw chicken in the broth and shred once cooked.
- For a creamier version, stir in 1/2 cup of heavy cream at the end.
