Shrimp Filling

  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • ½ pound raw shrimp, peeled and deveined
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon lemon juice
  • 1 tablespoon chopped parsley

Sandwich Assembly

  • 4 slices sourdough or French bread
  • 1 tablespoon mayonnaise or softened butter for spreading
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese


Instructions

  1. Cook Garlic and Shrimp: In a skillet, melt butter over medium heat. Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn it. Add shrimp along with salt and black pepper, cooking for 3–4 minutes until shrimp turn pink and are cooked through.
  2. Add Lemon and Parsley: Stir in lemon juice and chopped parsley to the shrimp mixture. Remove from heat and chop the shrimp into bite-sized pieces for easier eating in the sandwich.
  3. Prepare Bread: Spread mayonnaise or softened butter on one side of each bread slice, which helps achieve a golden, crispy crust when cooked.
  4. Assemble Sandwiches: Place two bread slices mayo-side down in a clean skillet over medium heat. Evenly layer half of the shredded mozzarella, half of the chopped shrimp mixture, and half of the shredded cheddar on each slice in the skillet. Top with the remaining bread slices, mayo-side up.
  5. Cook Sandwiches: Cook the sandwiches over medium heat for 3–4 minutes on each side, flipping carefully, until the bread is golden brown and the cheeses have melted completely.
