Instructions
- Preheat the oven: Set your oven to 400°F (200°C) and prepare a large baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.
- Toss potatoes with seasonings: In a large bowl, combine the halved baby potatoes with olive oil, minced garlic, dried Italian herbs, salt, and black pepper. Toss thoroughly to make sure every potato piece is evenly coated with the flavorful mixture.
- Roast the potatoes: Spread the coated potatoes cut side down in a single layer on the prepared baking sheet. Roast in the oven for 25 to 30 minutes until they turn golden brown and become tender inside.
