Description

This Cheesy Garlic Butter Mushroom Stuffed Chicken is a delicious and comforting dish featuring tender boneless chicken breasts stuffed with a savory mixture of sautéed mushrooms, garlic, and melted mozzarella and Parmesan cheeses. Baked to perfection, this flavorful entree is perfect for a family dinner or special occasion, garnished with fresh parsley for a burst of freshness.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste

Filling

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 8 ounces mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Garnish

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Grease a baking dish or line it with parchment paper to prepare for baking the chicken.
  2. Prepare Chicken: Carefully create a pocket in each chicken breast using a sharp knife, being cautious not to cut all the way through. Season both inside and outside of the chicken breasts with salt and pepper to taste.
  3. Sauté Mushrooms: In a skillet over medium-high heat, add olive oil and butter. Once melted, add the sliced mushrooms and cook until they turn golden brown, about 5 to 7 minutes. Add the minced garlic and sauté for an additional 1 to 2 minutes until fragrant. Remove from heat and set aside.
  4. Make Cheese Filling: In a mixing bowl, combine the shredded mozzarella and grated Parmesan cheeses.
  5. Stuff Chicken: Fill each chicken breast pocket with the sautéed mushroom and garlic mixture followed by the cheese mixture. Secure the opening with toothpicks if needed to hold the filling inside.
  6. Bake: Place the stuffed chicken breasts into the prepared baking dish. Bake in the preheated oven for 25 to 30 minutes, or until the chicken is fully cooked through and the cheese inside is melted and bubbly.
  7. Serve: Remove the toothpicks, garnish the baked chicken breasts with fresh chopped parsley, and serve immediately while warm.

Notes

  • Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (75°C) for safety.
  • Allow the chicken to rest for a few minutes after baking to keep it juicy.
  • You can substitute mozzarella with other melting cheeses such as Monterey Jack or fontina for a different flavor.
  • If mushrooms are not available, sautéed spinach or bell peppers can be used as alternative fillings.
  • To make prepping easier, butterfly the chicken breasts before stuffing.
