Ingredients

Scale

Sausage & Veggies

  • 3 Medium Sausages, cut diagonally
  • 2 lb potatoes, diced
  • 1 Small Onion, diced
  • 3 Cloves Garlic, chopped

Cheese & Dairy

  • 2 Cups Shredded Cheddar Cheese, divided
  • 1 cup extra old sharp white cheese
  • 1/2 Cup Milk
  • 1/4 Cup Unsalted butter, melted

Seasonings

  • 1 Medium Package Ranch mix
  • 1 tsp Salt
  • 1 tsp Ground black pepper
  • 2 tsp Italian seasoning
  • 2 Tbsp Parsley, chopped for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking your casserole.
  2. Cook Sausage and Sauté Aromatics: Add the diagonal-cut sausages to a pan and fry over medium-high heat until fully cooked. Push the sausage to one side of the pan and add diced onion and chopped garlic. Sauté until fragrant and soft. Transfer this mixture to your chosen casserole dish.
  3. Cook Potatoes: In the same pan, add diced potatoes and fry for about 5 minutes until slightly browned but not fully cooked. Add them to the casserole dish with the sausage and aromatics.
  4. Prepare Creamy Ranch Sauce: In a small bowl or measuring cup, whisk together melted butter, milk, and ranch seasoning mix until well combined.
  5. Assemble Casserole: Pour the ranch sauce evenly over the potatoes and sausages in the casserole dish. Season with salt, black pepper, and Italian seasoning. Sprinkle half of the shredded cheddar cheese and all the extra old sharp white cheese on top, then mix gently to incorporate the cheeses into the mixture.
  6. Bake: Place the casserole in the preheated oven and bake for 45 minutes, or until the potatoes are tender when pierced with a fork.
  7. Add Remaining Cheese: Remove the casserole from the oven and sprinkle the remaining cheddar cheese evenly over the top. Return it to the oven for a few minutes until the cheese melts and is bubbly.
  8. Garnish and Serve: Remove from oven, garnish with chopped parsley, and serve hot for a delicious cheesy ranch potato sausage bake experience.

Notes

  • For a spicier version, add crushed red pepper flakes when seasoning.
  • Use cooked leftover sausage or different types like chorizo for flavor variation.
  • For smoother potatoes, parboil them briefly before frying.
  • Can be made ahead and refrigerated, then baked before serving.
  • Leftovers store well in the fridge for up to 3 days and reheat in the oven.
