Instructions

  1. Sauté Aromatics and Chicken: In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant. Add the chicken pieces, season with kosher salt and freshly ground black pepper, and cook, stirring occasionally, until the chicken is golden on the outside, about 6 minutes.
  2. Add Rice and Liquids, Simmer: Stir in the white rice, heavy cream, and chicken broth. Bring the mixture to a simmer over medium-low heat. Cover the skillet and cook until the rice is tender, about 30 minutes, stirring occasionally to prevent sticking.
  3. Incorporate Broccoli and Cheese: Once the rice is tender, add the broccoli florets and 1½ cups of shredded sharp cheddar cheese. Stir until combined and continue simmering uncovered until the broccoli is tender and the cheese has melted, about 5 more minutes. Adjust seasoning with salt and pepper, and add more chicken broth if the mixture becomes too dry, aiming for a moist, slightly wet consistency.
