Ingredients
Scale
Beef Filling
- 1 pound ground beef
- 1 ounce taco seasoning (store-bought or homemade, about 1 packet)
- 4 ounces cream cheese (½ brick)
- ½ cup sour cream
- ½ cup salsa (store-bought or homemade)
- 1 cup freshly shredded pepper jack cheese
Assembly
- 8 tortillas (corn or flour)
Toppings (optional)
- Salsa
- Guacamole
- Sour cream
- Shredded cheese
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly spray a 9×13-inch baking pan or a jellyroll pan with nonstick spray. Set aside.
- Cook the Ground Beef: Heat a large pan over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until it is no longer pink and fully cooked through.
- Add Taco Seasoning: Stir in the taco seasoning evenly to coat the beef with flavorful spices.
- Mix in Cream Cheese: Add the cream cheese to the pan and stir continuously until it melts completely and blends thoroughly with the beef mixture.
- Incorporate Sour Cream and Salsa: Stir in the sour cream and salsa until the mixture is well combined and heated through. Remove the pan from heat.
- Add Shredded Cheese: Fold in the freshly shredded pepper jack cheese into the warm beef mixture until it melts and combines evenly.
- Soften Tortillas: Microwave the tortillas for about 10 seconds to make them pliable and easier to roll without cracking.
- Assemble the Taquitos: Lay one tortilla flat on a clean surface, spoon a generous amount of the beef mixture onto one side, then roll the tortilla tightly around the filling. Place the rolled taquito seam-side down in the prepared baking pan. Repeat with remaining tortillas and filling.
- Bake the Taquitos: Bake the taquitos in the preheated oven for about 15 minutes or until they are crispy and golden brown. Watch carefully to avoid burning or drying out.
- Serve and Enjoy: Serve the crispy beef taquitos warm with your favorite toppings such as salsa, guacamole, sour cream, and extra shredded cheese for dipping and added flavor.
Notes
- For extra crispiness, you can spray the taquitos lightly with cooking spray before baking.
- Corn tortillas are traditional and provide extra crunch, but flour tortillas work well too.
- Adjust the heat level by choosing mild, medium, or hot salsa and taco seasoning according to preference.
- Leftover taquitos can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven to retain crispiness.
- These taquitos also freeze well; bake from frozen and add a few minutes to cooking time.
