Chicken:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 packet fajita seasoning (or 2 tablespoons homemade)
Veggies:
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 small red onion (sliced)
Others:
- 1 cup shredded Mexican blend cheese
- Chopped fresh cilantro for garnish
Instructions
- Preheat the oven: Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
- Season the chicken: Rub the chicken breasts with olive oil and fajita seasoning on both sides.
- Arrange in dish: Place seasoned chicken breasts in the baking dish and add sliced peppers and onions around them.
- Bake: Cover with foil and bake for 25 minutes. Remove foil, sprinkle cheese over chicken, and bake uncovered for another 10–15 minutes until chicken is cooked through and cheese is melted.
- Serve: Garnish with fresh cilantro and serve hot.

- You can use chicken thighs or add black beans and corn for variety.
