Description

This Cheesy Baked Fajita Chicken is a delicious and easy one-pan meal that’s perfect for a busy weeknight dinner. Tender chicken breasts are seasoned with fajita spices, baked with colorful bell peppers and onions, then topped with melted cheese for a satisfying and flavorful dish.

Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 packet fajita seasoning (or 2 tablespoons homemade)

Veggies:

  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 small red onion (sliced)

Others:

  • 1 cup shredded Mexican blend cheese
  • Chopped fresh cilantro for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Season the chicken: Rub the chicken breasts with olive oil and fajita seasoning on both sides.
  3. Arrange in dish: Place seasoned chicken breasts in the baking dish and add sliced peppers and onions around them.
  4. Bake: Cover with foil and bake for 25 minutes. Remove foil, sprinkle cheese over chicken, and bake uncovered for another 10–15 minutes until chicken is cooked through and cheese is melted.
  5. Serve: Garnish with fresh cilantro and serve hot.
