Cookies:
- 1 cup unsalted butter, softened

- 2 cups semi-sweet chocolate chips
Cheesecake Filling:
- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Make the cookie dough: In a large bowl, cream together butter and sugars. Add eggs one at a time, then mix in vanilla. In a separate bowl, whisk flour, baking soda, and salt. Combine wet and dry ingredients, then stir in chocolate chips.
- Prepare the filling: Beat cream cheese, sugar, and vanilla until smooth.
- Assemble the cookies: Flatten 2 tablespoons of cookie dough, place 1 teaspoon of filling in the center, then seal the dough around it. Place on baking sheets.
- Bake: Bake for 12–14 minutes until golden. Cool on sheets before transferring to a rack.
