Instructions

Heat a nonstick skillet over medium heat and lightly grease with butter. Pour about 1/4 cup of batter into the pan, swirling to coat the bottom evenly. Cook for 1–2 minutes until the edges lift, then flip and cook for another 30 seconds. Transfer to a plate and repeat with remaining batter.
- Make the cheesecake filling: Beat the cream cheese until smooth. Add powdered sugar and vanilla, mixing until combined. Slowly beat in the heavy cream until light and fluffy.
- Assemble the roll-ups: Spread a thin layer of cheesecake filling over each crepe, then roll tightly. Slice into 2–3 pieces or serve whole. Top with berries, powdered sugar, or chocolate sauce if desired.
