  • 3 cups chicken broth
  • 1/4 cup all purpose flour
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1/4 cup sour cream


Instructions

  1. Brown the Beef: In a large pot over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess grease and set the beef aside.
  2. Sauté Vegetables: In the same pot, melt 1 tablespoon of butter. Add the diced onion, carrots, celery, dried basil, and dried parsley. Cook for about 5 minutes until the vegetables begin to soften.
  3. Cook Potatoes: Add the peeled and diced potatoes along with the chicken broth to the pot. Bring to a gentle boil, then reduce the heat and simmer for 10 to 12 minutes until the potatoes are tender.
  4. Make the Roux & Sauce: In a separate small saucepan, melt 2 tablespoons of butter over medium heat. Whisk in the flour to form a roux and cook for about 2 minutes. Slowly whisk in the whole milk until the mixture is smooth and slightly thickened.
  5. Combine Mixtures: Pour the roux mixture into the soup pot and stir well. Add the cooked ground beef back into the pot. Simmer the soup for another 5 minutes.
  6. Add Cheese & Cream: Reduce heat to low and stir in the shredded cheddar cheese until melted. Mix in the sour cream and season with salt and black pepper. Stir until the soup is creamy and fully combined.
  7. Serve: Serve the soup hot, garnished if desired with crispy bacon, chopped pickles, or green onions for extra flavor.
