Ingredients

Orzo Pasta:

1 cup

Olive Oil:

1 tablespoon

Butter:

1 tablespoon

Grated Carrots:

1 cup (about 2 medium carrots)

Garlic:

1 clove (minced)

Broth:

1 3/4 cups (low-sodium vegetable or chicken)

Salt:

1/4 teaspoon (or to taste)

Black Pepper:

1/4 teaspoon

Parsley:

2 tablespoons (chopped)

Parmesan Cheese:

2 tablespoons (grated, optional)

Instructions

  1. Heat Olive Oil and Butter: In a medium saucepan, heat olive oil and butter over medium heat.
  2. Sauté Garlic and Carrots: Add the garlic and cook until fragrant. Stir in grated carrots and sauté until slightly softened.
  3. Add Orzo and Broth: Add orzo and toast briefly. Pour in broth, salt, and pepper. Bring to a boil, then cover and simmer until tender.
  4. Finish and Serve: Remove from heat, let sit covered, then stir in parsley and Parmesan if using. Serve warm.

Notes

  • You can substitute grated carrot with baby carrots or carrot purée for a different texture.
  • Omit Parmesan for a dairy-free version.
