Instructions

  1. Cook the Chicken: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chicken pieces and cook until browned and just cooked through, about 5–6 minutes. Remove the chicken from the pot and set it aside.
  2. Sauté Vegetables and Spices: In the same pot, add the diced onion, green bell pepper, and minced garlic. Sauté these until softened and fragrant, approximately 4–5 minutes. Stir in the Cajun seasoning, cumin, dried oregano, and smoked paprika to coat the vegetables evenly.
  3. Add Beans, Chiles, and Broth: Return the cooked chicken to the pot. Add the drained white beans, diced green chiles, chicken broth, and frozen corn. Stir everything together, bring the mixture to a simmer, cover the pot, and cook for 10–15 minutes to allow the flavors to meld.
  4. Create a Creamy Finish: Reduce the heat to low. Stir in the heavy cream and cubed cream cheese. Continue stirring until the cream cheese fully melts and the chili achieves a creamy, smooth texture.
