  • 4 large russet potatoes
  • 1 tablespoon olive oil

Broccoli Cheese Sauce:

  • 2 cups fresh broccoli florets, chopped
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Optional Toppings:

Instructions

  1. Preheat oven: Preheat oven to 400°F.
  2. Prepare Potatoes: Scrub potatoes clean, prick with a fork, rub with olive oil, sprinkle with salt, and bake for 45–60 minutes until tender.
  3. Prepare Broccoli: Steam or microwave broccoli florets until tender.
  4. Make Cheese Sauce: Melt butter, whisk in flour, add milk, cook until thickened, then stir in cheddar cheese, garlic powder, and black pepper. Mix in steamed broccoli.
  5. Assemble: Slice open cooked potatoes, fluff the insides, and fill with broccoli cheese sauce.
