Quinoa Mixture:

- 2 large eggs
- 1 clove garlic (minced)
- 1/4 teaspoon onion powder

- 1/8 teaspoon black pepper

Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin with olive oil spray.
- Mix the ingredients: In a large bowl, combine the quinoa, broccoli, cheddar cheese, Parmesan, breadcrumbs, eggs, garlic, onion powder, salt, and pepper. Mix until fully combined.
- Fill the muffin tin: Spoon the mixture into the prepared muffin tin, pressing down gently to compact.
- Bake: Bake for 18 to 22 minutes, or until the tops are golden and the bites are set.
- Cool and serve: Let cool in the pan for 5 minutes before removing. Serve warm or at room temperature.
