  • 1 cup shredded sharp white cheddar cheese

Topping:

  • 1/2 cup panko breadcrumbs
  • 2 tablespoons melted butter
  • 1 tablespoon chopped fresh thyme or parsley, optional

Instructions

  1. Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Cook macaroni in salted boiling water until al dente, drain, and set aside.
  3. Melt butter in a large saucepan over medium heat. Whisk in flour and cook for 1 minute.
  4. Gradually whisk in warm milk and cream until smooth and thickened, about 5 minutes.
  5. Stir in salt, pepper, and nutmeg.
  6. Add brie, cheddar, and Parmesan, stirring until melted and creamy.
  7. Add cooked pasta and toss to coat, then transfer to prepared baking dish.
  8. Mix panko breadcrumbs with melted butter in a small bowl and sprinkle over the top.
  9. Bake for 20–25 minutes until bubbly and golden brown.
  10. Garnish with fresh thyme or parsley before serving.
