- 6 ounces brie cheese, rind removed and cut into chunks

Instructions
- Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
- Cook macaroni in salted boiling water until al dente, drain, and set aside.
- Melt butter in a large saucepan over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in warm milk and cream until smooth and thickened, about 5 minutes.
- Stir in salt, pepper, and nutmeg.
- Add brie, cheddar, and Parmesan, stirring until melted and creamy.
- Add cooked pasta and toss to coat, then transfer to prepared baking dish.
- Mix panko breadcrumbs with melted butter in a small bowl and sprinkle over the top.
- Bake for 20–25 minutes until bubbly and golden brown.
- Garnish with fresh thyme or parsley before serving.
