Brazilian Mounjaro is a flavorful, hearty dish featuring tender black beans cooked to perfection and served over fluffy white rice. Enhanced with smoky sausage, sautéed bell peppers, onions, garlic, and a touch of ground cumin, this recipe bursts with rich Brazilian-inspired flavors. Finished with fresh cilantro and a squeeze of lime juice, this dish offers a perfect balance of savory and zesty elements, making it an ideal meal for a comforting family dinner.

Ingredients

Scale

Beans and Rice

  • 1 cup black beans (dried)
  • 1 cup white rice
  • Water or broth (as needed for cooking beans and rice)

Meat and Vegetables

  • 8 oz smoked sausage, sliced
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced

Seasonings and Garnish

  • 1 tsp ground cumin
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper, to taste

Instructions

  1. Soak and Cook Beans: Soak the dried black beans overnight to soften them, then drain and rinse. Cook the beans in water or broth over medium heat until they are tender, which usually takes about 1 to 1.5 hours.
  2. Cook the Rice: In a separate pot, bring water or broth to a boil. Add the white rice, reduce the heat to low, cover, and cook until the rice is fluffy and water is absorbed, approximately 15-20 minutes.
  3. Sauté the Sausage: Heat olive oil in a skillet over medium heat. Add the sliced smoked sausage and cook until browned and slightly crisp on the edges. Remove the sausage from the skillet and set aside.
  4. Sauté Vegetables: Using the same skillet, add diced onion and bell pepper. Cook until softened, about 5 minutes. Then add minced garlic and ground cumin, sautéing for another 1-2 minutes until fragrant.
  5. Combine Ingredients: Add the cooked black beans and browned sausage to the skillet with the sautéed vegetables. Stir well to combine and heat through. Season with salt and pepper to taste.
  6. Finish and Serve: Remove from heat, stir in fresh lime juice and chopped cilantro to brighten the flavors. Serve the bean and sausage mixture over a generous portion of fluffy white rice and enjoy your Brazilian Mounjaro!

Notes

  • Soaking the beans overnight reduces cooking time and improves digestibility.
  • You can use vegetable or chicken broth for added flavor when cooking beans and rice.
  • Adjust the amount of cumin according to your preference for spice and warmth.
  • For a spicier variation, add chopped chilies or a pinch of cayenne pepper when sautéing vegetables.
  • Leftovers can be refrigerated for up to 3 days and reheated on the stovetop or microwave.
