Yogurt Base

Blueberry Compote
- 1/2 cup blueberries (fresh or frozen)
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1 tsp cornstarch (optional, for thickening)
- 1 tbsp water (to mix with cornstarch, if using)
Instructions
- Make the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, honey or maple syrup, and lemon juice. Simmer for about 5 minutes, stirring occasionally, until the blueberries soften and begin to break down. If a thicker compote is desired, dissolve the cornstarch in 1 tablespoon of water and stir it into the simmering berries. Allow the compote to cool completely before use.
- Prepare the Yogurt Base: In a mixing bowl, stir together the Greek yogurt and vanilla extract until smooth and creamy. Taste the mixture and add extra honey or maple syrup if a sweeter flavor is preferred.
- Fill the Molds: Spoon the yogurt mixture into silicone molds or a mini muffin tin, filling each about three-quarters full to leave room for the swirl of blueberry compote.
- Add the Blueberry Swirl: Place a small spoonful of the cooled blueberry compote on top of each yogurt-filled mold. Using a toothpick or skewer, gently swirl the compote through the yogurt to create a marbled, artistic effect.
- Freeze: Transfer the molds to the freezer and freeze for at least 3 hours, or until the bites are completely solid and set.
- Unmold and Serve: Once frozen, carefully pop the yogurt bites out of their molds and place them in an airtight container. Store in the freezer and allow each bite to sit at room temperature for 2 to 3 minutes before eating to achieve the best texture.
