  • 1 tsp lemon juice
  • 1 tsp cornstarch (optional, for thickening)
  • 1 tbsp water (to mix with cornstarch, if using)


Instructions

  1. Make the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, honey or maple syrup, and lemon juice. Simmer for about 5 minutes, stirring occasionally, until the blueberries soften and break down slightly. If you prefer a thicker compote, dissolve the cornstarch in 1 tablespoon of water and stir it into the simmering berries. Allow the compote to cool completely before proceeding.
  2. Prepare the Yogurt Base: In a mixing bowl, stir together the Greek yogurt and vanilla extract until smooth and creamy. Taste the mixture and add extra honey or maple syrup if a sweeter bite is desired.
  3. Fill the Molds: Spoon the yogurt mixture into silicone molds or a mini muffin tin, filling each cavity about three-quarters full to leave space for the blueberry swirl.
  4. Add the Blueberry Swirl: Place a small spoonful of the cooled blueberry compote on top of each yogurt-filled mold. Use a toothpick or skewer to gently swirl the compote into the yogurt, creating a marbled, artistic effect.
  5. Freeze: Transfer the molds to the freezer and freeze for at least 3 hours, or until the bites are solid and fully set.
