Description

These Blackberry, Pineapple, and Coconut Swirl Italian Ice Pops are a refreshing and vibrant summer dessert combining tart blackberries, sweet pineapple, and creamy coconut milk. Naturally sweetened and dairy-free, these frozen treats are perfect for a healthy, vegan-friendly indulgence.

Blackberry Layer

  • 1 cup fresh or frozen blackberries
  • 1 tablespoon honey or maple syrup

Pineapple Layer

  • 1 cup fresh pineapple chunks
  • 2 tablespoons lime juice
  • 1 tablespoon sugar

Coconut Layer

  • 1 cup canned coconut milk (full fat)
  • 2 tablespoons honey or agave syrup
  • 1 teaspoon vanilla extract


Instructions

  1. Prepare Blackberry Mixture: In a blender, combine the blackberries and 1 tablespoon of honey. Blend until smooth, then strain through a fine mesh sieve to remove seeds. Set aside.
  2. Prepare Pineapple Mixture: Rinse the blender. Then blend the pineapple chunks, lime juice, and sugar until smooth. Set aside.
  3. Prepare Coconut Mixture: In a separate bowl, whisk together the coconut milk, honey, and vanilla extract until fully combined.
  4. Assemble Ice Pops: Spoon alternating layers of the blackberry, pineapple, and coconut mixtures into ice pop molds. Use a skewer or butter knife to gently swirl the layers together for a marbled effect.
  5. Freeze: Insert sticks into molds and freeze for at least 6 hours or until fully frozen.
  6. Unmold: To release the ice pops, run warm water over the outside of the molds for a few seconds and gently pull out the pops. Enjoy!

Notes

  • Use maple syrup or agave in place of sugar and honey for a refined sugar-free version.
  • Frozen fruit can be used if fresh fruit isn’t available.
  • For a creamier texture, use full-fat coconut milk as indicated.
