Berry French Toast Casserole:

  • 1 loaf French bread (day-old, cut into 1-inch cubes)
  • 1 1/2 cups mixed berries (fresh or frozen)
  • 6 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons butter (cut into small pieces)
  • powdered sugar and maple syrup for serving

Instructions

  1. Grease the baking dish: Grease a 9×13-inch baking dish and spread half of the bread cubes in the bottom.
  2. Layer bread and berries: Layer half the berries over the bread, then repeat with remaining bread and berries.
  3. Prepare custard mixture: In a large bowl, whisk together eggs, milk, heavy cream, sugars, vanilla, cinnamon, and salt. Pour over the bread and berries, pressing down gently.
  4. Chill and bake: Cover and refrigerate for at least 2 hours. Preheat oven to 350°F, bake uncovered for 45–50 minutes until set. Dust with powdered sugar, serve with maple syrup.
