Instructions
- Preheat and prepare pan: Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin or line it with mini paper liners to prevent sticking.
- Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon until evenly combined.
- Mix wet ingredients: In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter until smooth and well blended.
- Combine wet and dry: Pour the wet ingredients into the dry ingredients. Stir gently just until the batter is combined; avoid overmixing to keep the fritters tender.
- Fold in blueberries: Carefully fold the fresh or frozen blueberries into the batter, spreading them evenly throughout without breaking them up.
- Fill muffin tin: Spoon the batter evenly into the prepared mini muffin tin, filling each cup about three-quarters full to allow room for rising.
- Bake: Bake in the preheated oven for 12 to 14 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
